Chronological order follows the official in-universe timeline Lucasfilm itself publishes. Series are placed at their confirmed in-story years: Obi-Wan Kenobi is explicitly set 10 years after Revenge of the Sith; Andor spans the years directly leading into Rogue One; The Mandalorian is set several years after Return of the Jedi.

Which order should you actually pick?

First time through, release order almost every fan and Lucasfilm itself recommends it — the prequels' reveals only land the way they were designed to if you already know the original trilogy first. Chronological order is a rewatch mode: it tells one continuous story start to finish, but spoils Darth Vader's identity and several other reveals before they'd naturally happen.

Do I need to watch the series too?

Not for the films to make sense on their own, but the newer films increasingly assume context from them — Andor in particular deepens Rogue One significantly, and The Mandalorian has become its own hub connecting several other current Star Wars stories. Series are badged SERIES right on the path so you always know what you're looking at.
