Which order should you actually pick?

First time through? Go release order — it's how the surprises (the first team-up, the Thanos reveal, the snap) were designed to land, and it matches every "MCU in order" list you'll find elsewhere. Rewatching, or want the timeline to make sense on its own terms? Chronological order removes the flash-forwards and flashbacks and just tells the story start to finish.

Do I need to watch the Disney+ shows too?

For the earlier films, no — WandaVision, Loki and Hawkeye add context but skipping them won't leave you lost. That changes for the newest wave: Daredevil: Born Again leans on Echo, and Thunderbolts* leans on Daredevil: Born Again. Series nodes are badged SERIES right on the path so you can decide what to skip with your eyes open.
